The sap from coconut flowers is hand collected by nimble workers known as "toddy tappers" who can be seen early in the morning scaling the large coconut trees. You can combine the syrup with much more than your favourite Pina Coladas too, try it in a rum cocktail or pop it into a Long Island Ice Tea for something a little different from the norm. The sap has its own natural yeast and starts fermenting naturally once collected and must be distilled within 24Hrs of being collected (else it would over ferment and turn into Vinegar). It is then distilled according to an ancient recipe and then matures in Halmilla wooden barrels from Sri Lanka.A classic cocktail flavour which evokes images of the Caribbean and hours of sunshine, coconut is a delicate yet distinct taste which is a real favourite amongst mixologists. Aged in traditional Sri Lankan Halmilla wood, every step in creating Rockland Ceylon Arrack receives the personal attention of our Master Blender. The Ceylon 'toddy tappers' can be seen early morning atop tall coconut trees 'tight-rope walking' effortlessly from tree to tree, along the shoreline where coconut trees grow in abundance.
