As our first release back in 2018, Dream to Dram has, and will always have, a special place in our story; the first chapter comes to a close and we are so excited to continue our journey and take you along with us. Reduction doesn’t alter the overall composition greatly – adding just some creaminess and sawn wood from the ex-bourbon cask. It released its flagship Dream to Dram single malt in 2019, for which it scooped the World Whisky Award for its class. The starfruit aromas become more pronounced later while giving off subtle honeydew melon notes at the end.

Creamy toffee and vanilla pods sit with tinned apricots and peaches whilst milky breakfast cereals are joined by crumbly shortbread.

Under the supervision of the legendary whisky expert Jim Swan a carefully considered combination of 1st fill ex-Bourbon and 1st fill STR - that's Shaved, Toasted and Re-charred ex-Portuguese red wine casks- were used to mature this flagship whisky.

These cookies help provide information on metrics the number of visitors, bounce rate, traffic source, etc. Our elegantly crafted signature blend of 90% ex-Bourbon barrels and 10% shaved, toasted and re-charred ex-red wine barriques arises from the marriage of light and fruity Kingsbarns spirit with casks we hand select specially to accentuate the spirit's character. Aromas of raisins, butterscotch and sweet spices fill the nose, and the palate offers notes of dark chocolate, orange peel, banana, raisins and caramel. Bourbon casks emphasise the sweet and fruity character, with STR barriques giving a deep richness and colour.

Having established the Kingsbarns Distillery company in 2008, Douglas sold a controlling stake to the Wemyss family in 2013. Dream to Dram epitomised this and it's masterful illustration of the Lowland region has elegantly provided the foundation for Kingsbarns and malts to come; Doocot does not deviate from this but instead evolves the taste and texture into something new: a creamier, butter pastry-like evolution. I’m not hearing the same clamours of demand for young whisky (outside of chasey inaugural editions).

We were fortunate to recently have had a virtual tasting session with Kingsbarns’ distillery manager, Peter Holroyd. There is a real harshness to the nose and the palate, and not much in the way of balance: a couple of flavours came through strongly out of a somewhat jumbled mess.
