The two signals are reversed in polarity, so as they travel down the cable, they cancel each other out. Remember, the stage box and the multi-core cable that runs to the FOH console is just a fancy extension cord for audio. What actually happens is that the hot/positive (+) and ground from the XLR get connected to the corresponding hot/positive/tip (+) and ground/sleeve on the 3.
