So if your goal is to make fudgy or gooey brownies, and they sink in the middle on cooling – you’ve succeeded! To make these gluten-free brownies dairy-free, sub out the butter for melted refined coconut oil or non-dairy butter. I substituted apple sauce for the coconut oil (to lessen the amount of fat- 1:1) and I used monk fruit (about half the amount listed above) instead of the sugar. Use a whisk to stir it around a bit to make sure there’s nothing wrong with it (like weevils or foreign objects or whatever).

I followed the recipe precisely (using 72% cocoa chocolate and 100g of coconut sugar, as advised) and then added some cheeky extras. Dissolve the sugar– Whisk the sugar vigorously into the warm, almost hot butter/melted chocolate mixture. And while mixing your own homemade brownies isn't terribly complicated or time-consuming, boxed mixes make this process even easier when you're in a hurry or just want to bake a batch without bothering with measuring cups and spoons. You’ll know your gluten free brownies are done when a toothpick can be inserted into the center and comes out clean. A lot of work went into fine tuning ratios and quantities so I wouldn’t mess around with them unless you really know your stuff.While I’m a traditional baker at heart, I still want to be able to make amazing desserts for my coeliac friends and family. Heat over medium heat, stirring with a heatproof spatula until the butter melts and the mixture lightens in color. It’s always good to use at least half dark chocolate – it has less sugar and a higher cocoa content which makes these brownies super fudgy.
