Glendalough Wild Botanical Gin features some somewhat unusual floral botanicals. The ox eye daisy is a common roadside weed stateside— even its Latin name a yawn at its quotidian character— Leucanthemum vulgare. When dried ox eye daisies are somewhat bitter and subtly sweetly floral. Whiskey is representative of traditional Ireland. There’s a long history of whiskey in Ireland. We’ve had whiskey here for hundreds of years – in fact, Ireland’s oldest continuously operating whiskey, Old Bushmills has been distilling whiskey since 1608. There are a few typically Irish whiskies – Old Bushmills, Jameson, Tullamore, Teeling, Redbreast, and you’ll find them in most traditional Irish pubs.

Glendalough Wild Botanical Gin

A rich gently pine-forward nose. Perhaps more fir bud than straight-up juniper (though there is a touch of that in there, too). Glendalough Wild Botanical Gin continues to cool with hints of lemon balm, woodruff and fresh meadow. It is certainly evocative of a place. It smells fresh, like a grassland in bloom. Loving this nose. The casks we have crafted are 250-liter hogsheads, slow-toasted using oak fire, then given a level 3 char. The Irish oak amplifies the flavour of the bourbon casks while adding layers of sweetness and bready, woody, earthy notes.

Most gins are made of juniper berries, coriander, angelica root, orris root, and licorice. However, Glendalough gin is made of a variety of botanicals, including wildflowers, fruits, and herbs. Shortcrosss Gin is made at Rademon Estate Distillery in Northern Ireland using a range of locally sourced botanicals, including wild clover, elderflowers, elderberries and apples. The gin comes across as creamy and sweet with spiced vanilla notes. Another thing to keep in mind is the color of the gin. Glendalough Rose Gin is a beautiful pink color, so it’s a good idea to serve it in a glass that shows it off. A highball glass or wine glass are both good choices. Micil Irish Gin has a perfumed and unique palate that helped it win Best Irish Contemporary Gin at the 2022 World Gin Awards. Don’t mess with Bertha. Big Bertha was a legendary cow from Co Kerry. Something of a local celebrity, she is entered into the Guinness Book of World Records – she lived some 49 years and gave birth to 39 calves! And when she died, she was so famous that they held a wake for Bertha.

I wasn’t able to find much current information on availability so there is a chance that it might be hard to get a bottle. I saw some press releases that stated it was available in the UK and in a handful of US states. This single estate spirit is made with great attention to detail from grain harvested from the estate. Once it has been turned into alcohol, it is used along with 11 botanicals in a triple distilling process in Classic London Dry Style. Made on the 300 acre Echlinville Estate, the Jawbox Classic Dry Gin is situated on the historic Ards Peninsula near Belfast.
