The Anova Precision Vacuum Sealer Pro has a sleek design that won't look obtrusive on the countertop. It also features various seal settings: vacuum and seal, moist, dry, seal, pulse vacuum, and external pulse vacuum, allowing the user control over the suction power and pulse. Despite its higher price and variety of settings, this model does come with an instruction booklet that’s straightforward enough to help beginners operate the sealer. There are just three options with this sealer. First is Vacuum & Seal, which does exactly what it says. It vacuums the air out of the bag, then creates the seal. I used this most often as I used and tested the machine, and it’s likely that this is what most people would choose for everyday food storage as well as sous vide cooking.

To test the marinade function, we used meat from the same pork roast and bathed in the same big batch of marinade. Efficiency is critical here; the ability to cut the bag with the vacuum sealer saves time and increases the accuracy of your cut. The vacuum channel on this sealer is deep, so it’s easier to fit the bag in and keep it in place. Also, the gap between the channel and the seal line was narrower than other devices we tried, which meant there was less bag waste. VacMaster VP210 Chamber Vacuum Sealer is built for commercial use, so it's the largest, heaviest, and most robust to consider. The chamber height is an impressive 5 inches, meaning there’s more space for food. At a whopping 83 pounds, this is likely going to park itself somewhere, where it will stay. It’s definitely not easily portable. The touch controls and operation of this machine are quite simple, though it takes a bit of force to get the lid to close and seal. It's a minor quibble, but we did find the buttons to be very sensitive: We accidentally turned it on before we meant to a few times when loading up the bag and food.

The retractable handheld sealer is what makes this machine two-in-one, and it works with canisters, jars, reusable zip-top bags, and more—provided you have compatible ones. The set includes a few bags, but everything else is sold separately. There's a dishwasher-safe drip tray to capture any drips and spills, and the machine also has an indicator light for when it gets full in case you forget. The price tag on this machine is pretty steep for the casual user, though it's a powerful, heavy-duty option for the more dedicated vacuum-sealing enthusiast. These handy tools remove air from the bags or containers that food is stored in, which prevents bacteria or mold from growing and protects food from freezer burn. Vacuum sealers are useful in various ways, but they're particularly helpful if you prefer buying products in bulk, meal prep, or trying to preserve food that you've grown or caught yourself. They’re also great for sous vide cooking. Ease of use and cleaning: We followed each machine's included instructions as we performed our tests, noting any steps that were confusing or difficult, or anywhere we found a better way to do things. After testing, we also cleaned each unit, rating them both on ease of cleaning and whether they got very dirty in the first place.
