Mix the color with your food thoroughly to get the best results. You can expect this to take effort work with gel dyes than liquid ones. Less common than gels and liquids, powdered food coloring is ideal for very dark colors. While you could use the powder alone, you can also mix the powder with some liquid to use it with dry ingredients. Although powdered dyes can be expensive and get messy, they do last a long time and won’t dry out like gels can. Powdered dyes are made out of synthetic coloring with no water, glycerin, or corn syrup. They’re sold in jars of totally dry powder. There are many ways to use it: add a pinch of the powder to your dry mixture or combine it with a few drops of clear alcohol for a paint-like consistency. You can even dust it onto foods to create a gentle finish.

Although the majority of consumers know that meals with vivid or artificial colors generally contain coloring, much fewer know that items that look natural, like salmon and oranges, sometimes get dyed to cover up natural color variations. Knowing how much food coloring to add for the intended result takes some experimentation. It always helps to use just a little dye at a time to prevent mistakes that could mean needing to throw out your food and start over. Keep in mind the intensity of the color you want since you’ll need far less coloring to get a pastel shade than a very dark one. The food colorings can be stored in an airtight container in the refrigerator for up to a week, or frozen in ice cube trays for up to one month. Just defrost before using. Red In a small saucepan, combine 2 cups (290g) fresh blueberries with 1/4 cup (57g) water and bring to a gentle boil. Reduce the heat slightly and simmer until the berries burst and break down. Powder Food Color These colors are notoriously difficult to achieve, even for makers of synthetic food coloring. Your best option is to work with red cabbage or radicchio. Per the instructions at Whole New Mom, start by washing and chopping the cabbage (or radicchio); put the cabbage in a pot, cover with water, and simmer on the stovetop for 10 minutes.
