There are fruit and ‘spice-forward’ flavours, such as ginger and pepper – which the team credits to those Bimber whisky casks – and you should also detect a range of other flavours from smoky charred oak to some fresh, tingly herbs. This is a very decent English blend, with more than a little help from the Scots.

The eagerly anticipated first whisky is expected to appear in late 2021, which follows smaller releases of new-make spirit and 18-month-aged spirit. In the meantime, you’ll have to make do with its superb Cask Aged Rum. Our Ex-Bourbon whisky is aged in an American barrel, providing its light golden colour. Filey Bay is a brand under the Spirit of Yorkshire Distillery released in 2016 in a 700ml bottle containing 46% ABV. The company’s distillers sought the advice of the industry legend, Dr. Jim Swan, to help them craft Yorkshire’s first single malt. In 2015, Anno Distillery collaborated with Westerham Brewery to craft the first whisky in Kent County. Westerham Brewery is in charge of the fermentation, while the Anno Distillery in Marden is for the distillation process. Although most famously known for creating Forest Gin, this Macclesfield-based Forest Distillery also offers one of the best English whiskies in the industry. The distillers blended 100% malt whiskies aged at least eight years old and then finished the spirit using a 50-year-old Oloroso Sherry cask. Unlike gin and vodka, which can be distilled and bottled within the space of a few weeks, there is a legal requirement to age whisky for a minimum of three years. While whisky cannot provide an immediate cash flow, the higher value of the spirit is future oriented, especially with the potential for creativity in the revitalisation of English whisky to develop its own unique style.As the only whisky distillery in Devon, we use local barley and natural ingredients to craft our single malt whiskies, cut with pure spring water from Dartmoor National Park.
