About this deal

We are baking this treat in both large traybakes and individually wrapped slices and we’ll be adding it to our Honeybuns online Christmas shop which will be going live towards the end of October.

There does seem to be a variety of mince pies this year from regular gluten free to frangipane topped and slices which makes a nice change. It is also nice to see a couple of places have a gluten free yule log too when for the past year or so only Tesco have had this.This gluten free Christmas Cake recipe brings the iconic treat into the 21 st Century. Of course, there is nothing to stop you using standard dried fruit only, but why not try something more colourful and altogether exciting? Although I used some of the usual suspects, this cake also throws Morello glacé cherries, blueberries, apricots, crystallised ginger, Iranian pistachios and flaked almonds into the mix. But even the standard fruit has been carefully selected for plumpness and juiciness… Flame raisins and Turkish sultanas are perfect. Oh… and I left out the peel! Whilst I haven’t specifically labelled this recipe as being vegan-friendly because 4 eggs is quite a few to replace and results can vary, you’re welcome to try some of these egg replacements listed below. You can use a food processor to make the initial cake batter, but don’t use it once you’ve added the dried fruit mixture. It’ll start to blend them instead of mixing them!
