This means the flavour profiles of mezcal are much more varied and mostly have a rich smokiness alongside floral, fruity and earthy tones. It’s made using a combination of espadin and tobalá magueys, which are then roasted in an earthen oven, before the juice is extracted using a traditional donkey-pulled tahona. Aged for 13 months in a blend of American and French oak barrels with flavours including maple, clove, and bitter orange aromas, and dark chocolate and sweet agave on the palate. Mezcal should always be served at room temperature to appreciate the nuanced aromatics, and in small sips ( not slammed). A little water in between sips helps to cleanse the palate (and, you know, may heed any headaches the next morning... though don’t take our word for it). How we test mezcal Clean and herbaceous in equal measure, our experts loved the fresh, eucalyptus-led nose and brightness brought by the combination of crisp citrus and young agave. Dos Hombres Mezcal is a brilliant blend of hand-selected Espadin agave from Oxaca. The mashed agave is fermented for 7-10 days in mountain water. It is then distilled in copper stills to create this delicate mezcal.
