Conduct regular frequent cleaning and sanitizing of cutting boards and utensils used in processing to help minimize the likelihood of cross-contamination. Wash fruits and vegetables carefully, particularly if they are eaten raw. If possible, vegetables and fruits should be peeled.
Salmonella types can be divided into "typhoidal" strains, which cause typhoid and paratyphoid fever, and "non-typhoidal" strains, which typically cause gut infections such as gastroenteritis. Symptoms of salmonellosis are relatively mild and patients will make a recovery without specific treatment in most cases. However, in some cases, particularly in children and elderly patients, the associated dehydration can become severe and life-threatening.
In the case of less serious infections, there are fewer symptoms – usually only diarrhoea two or three times a day for a couple of days. Most mild types of salmonella infection clear up in four to seven days without requiring any treatment other than rest and plenty of liquid. All persons should be aware of the hazards of working with infected animals and the importance of personal hygiene. A strict farm management program should be introduced. Movement of animals around the farm should be restricted to limit infection to the smallest group. Random mixing of animals should be avoided.Infection with Salmonella spp can present as severe clinical disease; however, clinically inapparent carriers that shed Salmonella in feces over prolonged periods are far more prevalent.
