Cuervo Especial products are mixto tequilas. Especial Silver is an unaged white tequila containing at least 51% agave, with the remainder being made up of sugarcane spirit. Aged for two months, the minimum amount of time established by the laws that govern Tequila to be a Reposado. So often I find that when reviewing whiskey, ice is the enemy. The only flavors in whiskey that survive are typically the results of the aging process. But with this tequila everything survives through the ice — all of the aromas, all of the flavors… they are still there and in full force.

Jose Cuervo gold has a beautiful amber to caramel-like hue, while Jose Cuervo silver has a clear appearance.

Agave harvesting: When ready to be harvested, the spiny leaves and roots are cut off the main plant body, called the agave heart or piña, which goes to processing.
