Weather: The 2000 vintage was seen by many as a miraculous year. The vines were hit by heavy rain, storms and hail in the winter, leaving a successful harvest on the brink. However, the vintage was saved by the hottest August and September in fifty years, providing the grapes with much needed sunshine and warmth.

Pinot Noir accounts for nearly 40% of the plantings in Champagne and lies at the heart of most blends - it gives Champagne its body, structure, strength and grip. It is planted across Champagne and particularly so in the southern Aube district. Remember to use a sparkling wine stopper to help keep the fizz as fresh as possible over this time period, you don't want to drink your Champagne flat! Starts out round and plush, then the structure takes over. Light peach and berry flavors prevail as this plays out on the lingering finish.
