The term “lagering” refers to the extended secondary aging the beer undergoes at cold temperatures (hovering above freezing). If you use an immersion or counterflow wort chiller, the temperature of the chilling water becomes a factor. Hint: If you are unsure of the quantities of hot and cold water required try filling the FV with hot and cold water without the ingredients to get a feel for what is needed to achieve 21°C-27°C. However, there is universal agreement that decoction mashing is not strictly required with modern malts and most brewers achieve excellent results with single or multi-step infusion mashing routines.

Days’ beers are brewed similar to other beers, but whilst other AF beers may be brewed to full strength and then have their alcohol content removed by industrial processes, Days’ method ensures no alcohol is produced at all, thus genuinely offering a beer with 0% ABV. Days Brewing’s ‘double fermentation’ technique does produce the taste of beer but we still get the flavours and aromas of unfermented wort in the drink, though not on the same level as other malty AF beers such as St Peter’s Without.

However, this requires warmer temperatures, around 60–70 °F (16–21 °C, than the optimum conditions for clean lager fermentation. After 12 to 24 hours, you will see indications that fermentation is underway such as foam beginning to occur and the brew becoming cloudy. The early cautioning can, however, lead to the notion that lagers are so difficult to brew that only the most advanced brewers should attempt them. Hint: Storing (conditioning) your beer beyond two weeks should improve aroma, flavour, mouthfeel, clarity and head retention.By downloading this case study, you acknowledge that GlobalData may share your information with GlobalData and that your personal data will be used as described in their Privacy Policy Submit Visit our Privacy Policy for more information about our services, how GlobalData may use, process and share your personal data, including information on your rights in respect of your personal data and how you can unsubscribe from future marketing communications.
